When planning your dining out in Cancun, remember that you are in one of the continent's finest seafood and shellfish zones. This means the usual abundance and variety of fish from the Caribbean and Gulf coasts of Mexico, plus the very freshest shrimp and lobster around. (The "lobster" is actually crayfish, clawless and meaty in the back.)
As it was part of the Maya territory, Cancun is a good place to sample typical Yucatecan dishes, as well as mexican and international fare. Small deer are found in Yucatan's jungles and venison in just about every regional menu. there are lots of (wild and domestic) turkey dishes, too. In fact, you'll find lots of wildgame dishes in general.
Another traditional Yucatecan dish is cochinita pibil (suckling pig baked in banana leaves and a zesty sauce). Its variation, pollo pibil, substitutes pork with chicken. All meat and fowl in pibil dishes are first marinated in achiote, a tasty, bright orange-red sauce made from the annatto seed. Papadzules, also a Yucatecan staple, are made of tortillas stuffed with boiled eggs and accompanied by a sauce of ground pumpkin seeds. Panuchos are open tortillas topped with fried black beans, chicken and pickled onions.
Yucatecan dishes tend to incorporate less chili than othe Mexican regional fare, but the area's garnish of hoice is the deadly habanera, a small, bright green chili found only in the peninsula. It was purportedly imported centuries ago from Java. While you may find it convenient to have most meals at your hotel, don't fail to venture out occasionally. Above all, don't overlook dining in other hotels.
Cancun has some of the finestand most exciting hotels in Mexico. It's a short bus or cab ride to any hotel on the island, yet each has its own character. Some visitors like to have a drink in one hotel, dinner in another, and go to still another for nightlife. There are many outstanding restaurants in the Hotel Zone. But if time allows, go into town for a wide variety of excellent fare from steaks to seafood to pizza. Entertainment includes dinner shows, such as the Mexican Fiestas with their regional dances.
Cancun has its own water purification system which supplies potable water to hotels, restaurants and other facilities. Bottled water is available if you ask for it, and is always recommended. Two popular regional beers are Leon and Montejo. Both have a distinctive flavor and make for a nice change.
